An old traditional dessert, <em><strong>pan\u2019e saba<\/strong><\/em> is named after the cooked, concentrated grape must (called \u2018<em>saba<\/em>\u2019) that is used to prepare it. <strong>Gallura\u2019s formaggelle<\/strong> are an Easter dessert filled with raisins and ricotta flavoured with lemon zest. <strong><em>Acciuleddi<\/em><\/strong>, typically prepared for Carnival, are made of braided dough, which is then deep-fried and served with honey and sugar. Even though they are classic Christmas pastries, <strong><em>cucciuleddi di meli<\/em><\/strong> are prepared all year round with honey: among the most complicated desserts to make, they are typical of Gallura\u2019s rural culture. <em><strong>Tiriccas<\/strong><\/em> are crisp pastries filled with saba and can also be found in the area of Monte Acuto: here, the local variant is called <em><strong>cuppulati<\/strong><\/em>. <strong>Nougat<\/strong> is perhaps the most representative sweet of the whole Sardinia and gave rise to a true art form in this region: in particular, the Sardinian recipe differs from others in that it uses <a href=\"https:\/\/discovergallura.it\/en\/gastronomy\/\">honey<\/a> instead of sugar. You should also taste <strong>baci d\u2019angelo<\/strong> (\u2018angel kisses\u2019) \u2013 biscuits filled with almonds, sugar, and lemon or orange zest \u2013 and <em><strong>sa niuledda<\/strong><\/em>, Christmas biscuits with orange zest, almonds, pepper, and honey typical of the area of Monte Acuto. <strong>Bread<\/strong>, essentialin the Mediterranean and local diet, comes in several varieties in Gallura: from <em>pane di tricu ruju<\/em> \u2013 the red wheat bread used for Gallura-style soup \u2013 to holiday bread, richly decorated and consumed during family lunches; from durum wheat bread to <em>spianata<\/em>, perfect with local <strong>cheeses and cold meats<\/strong>; last but not least<a href=\"https:\/\/discovergallura.it\/en\/gastronomy\/cheese-and-cold-meats\/\">,<\/a> the so-called <em>spianata su pane ladu<\/em>,<em> a variant<\/em>used for Monte Acuto\u2019s soup. <em>Carasau<\/em> is a typical bread prepared weekly in Gallura\u2019s <em>stazzi<\/em> and stands out for its freshness and softness.
