En la zona del Monte Acuto, en cambio, se cr\u00edan sobre todo ovejas, cabras y cerdos seg\u00fan la tradici\u00f3n trashumante. Aqu\u00ed, en medio de prados v\u00edrgenes caracterizados por las esencias del maquis mediterr\u00e1neo, la actividad pastoril representa una de las principales fuentes de ingresos locales. Precisamente de la ganader\u00eda proceden algunos de los productos t\u00edpicos m\u00e1s sabrosos: queso, embutidos y carne. En la civilizaci\u00f3n tradicional de los \u00abstazzi\u00bb, el cerdo ocupaba un lugar de honor, y su sacrificio se transformaba en un acto de convivencia en el que participaban no s\u00f3lo la
