Adem\u00e1s de quesos y embutidos, el entorno natural favorece la producci\u00f3n de <strong>miel<\/strong>, en particular la miel de cardo y la miel de madro\u00f1o (o miel\u00a0 amarga): la primera, m\u00e1s caracter\u00edstica, tiene un fuerte aroma, mientras que la segunda se distingue por su sabor amargo y su aroma t\u00edpicamente sardo. Entre los platos t\u00edpicos destaca la <strong>zuppa gallurese<\/strong> (o suppa cu\u00e0ta), un sabroso plato campesino del que existen diversas variantes, preparado con pan duro, caldo de carne y queso. Tambi\u00e9n existe una variante t\u00edpica de la zona de Monte Acuto, la <strong>zuppa montina<\/strong>, en la que se utiliza queso de vaca en lonchas, queso pecorino rallado y caldo de oveja. Tambi\u00e9n son muy sabrosos los chiusoni galluresi, \u00f1oquis cil\u00edndricos de superficie irregular, que suelen servirse con salsa, queso pecorino y carne picada de cerdo; son curiosos los bruglioni o puligioni, raviolis de pasta fresca rellenos de queso ricotta y, seg\u00fan la receta tradicional, az\u00facar. Entre las especialidades c\u00e1rnicas destacan la <strong>cordula<\/strong>, v\u00edsceras de cordero trenzadas de sabor muy intenso; el estofado de cabrito, que con su ternura y fuerte sabor conquista el paladar de quienes aprecian esta carne; lu pulceddu, el cochinillo asado, pr\u00edncipe de la tradici\u00f3n culinaria sarda y particularmente apreciado por el contraste entre su carne blanda y su corteza crujiente; cordero asado o al horno, aromatizado con esencias mediterr\u00e1neas; y, por \u00faltimo, la caza, entre la que destacan el jabal\u00ed en<br \/>\nsalsa agridulce, la liebre y la perdiz. Tambi\u00e9n merece la pena probar las <strong>panadas de Oschiri<\/strong>, pasteles horneados tradicionalmente rellenos de anguila o cerdo desmenuzado: incluso hay un festival dedicado a este plato.
