Son muy apreciados los suaves macarrones de Gallura, hechos con almendras, y los papassini (o pabassinas en la zona de Monte Acuto), deliciosas galletas en forma de rombo con nueces y pasas sultanas cubiertas de glaseado. El pan&#8217;e saba, antiguo dulce tradicional, toma su nombre del mosto de uva cocido y concentrado (llamado \u00absaba\u00bb) utilizado en su elaboraci\u00f3n. Las formaggelle de Gallura son un pastel de Pascua relleno de reques\u00f3n y pasas sultanas, aromatizado con piel de lim\u00f3n. Los acciuleddi, por su parte, son trenzas fritas t\u00edpicas de Carnaval, servidas con miel y az\u00facar. Los cucciuleddi di meli son dulces navide\u00f1os, en realidad preparados todo el a\u00f1o, hechos con miel: entre los m\u00e1s complicados de hacer, son t\u00edpicos de la civilizaci\u00f3n stazzi. Las tiriccas son dulces crujientes rellenos de saba, que tambi\u00e9n se encuentran en la zona del Monte Acuto con una variante conocida como cuppulati. Quiz\u00e1 el dulce m\u00e1s emblem\u00e1tico de Cerde\u00f1a sea el torrone, que ha dado lugar a un verdadero arte en esta regi\u00f3n: en concreto, la receta sarda se distingue por el uso de miel en lugar de az\u00facar. Tambi\u00e9n merece la pena degustar los \u00abbaci d&#8217;angelo\u00bb, dulces rellenos de almendras, az\u00facar y c\u00e1scara de lim\u00f3n o naranja, y \u00absa niuledda\u00bb, un dulce navide\u00f1o t\u00edpico de la zona de Montino elaborado con c\u00e1scara de naranja, almendras, pimienta y miel. El pan, parte esencial de la dieta mediterr\u00e1nea y de la cultura de Gallura, adopta<br \/>\ndiferentes formas en Gallura: desde el pan tricu ruju, el pan de trigo rojo utilizado para la sopa Gallura, hasta el pan festivo ricamente decorado, protagonista de los almuerzos familiares; desde el pan de trigo duro hasta la spianata, para degustar con quesos y embutidos locales, hasta la spianata su pane ladu, variante utilizada para la zuppa montina. El t\u00edpico pane carasau, en los stazzi de Gallura, se preparaba semanalmente. Este pan tiene la particularidad de ser un pan blando y fresco.
