Le <em><strong>pan\u2019e saba<\/strong><\/em>, ancien dessert traditionnel, tire son nom du mo\u00fbt de raisin cuit et concentr\u00e9 (dit \u00ab <em>saba<\/em> \u00bb) utilis\u00e9 pour la pr\u00e9paration. Les <strong>formaggelle de Gallura<\/strong> sont un g\u00e2teau de P\u00e2ques farci \u00e0 la ricotta et aux raisins secs, et aromatis\u00e9 aux zestes de citron. Quant aux <strong><em>acciuleddi<\/em><\/strong>, ce sont de petites tresses frites pr\u00e9par\u00e9es \u00e0 Carnaval et servies avec du miel et du sucre. Les <strong><em>cucciuleddi di meli<\/em><\/strong> sont des desserts de No\u00ebl \u00e0 base de miel, que l&rsquo;on pr\u00e9pare cela dit tout au long de l&rsquo;ann\u00e9e : faisant partie des sp\u00e9cialit\u00e9s les plus compliqu\u00e9es \u00e0 r\u00e9aliser, ils sont typiques de la civilisation des stazzi.. Les <em><strong>tiriccas<\/strong><\/em> sont des douceurs croustillantes farcies au saba, \u00e9galement pr\u00e9sentes dans la zone du mont Acuto \u00e0 travers une variante connue sous le nom de <em><strong>cuppulati<\/strong><\/em>. Le dessert le plus embl\u00e9matique de toute la Sardaigne est <strong>peut-\u00eatre le nougat,<\/strong> qui a donn\u00e9 naissance \u00e0 tout un art dans cette r\u00e9gion : la recette sarde se distingue notamment par son utilisation de <a href=\"https:\/\/discovergallura.it\/fr\/gastronomia\/\">miel<\/a> \u00e0 la place du sucre. \u00c0 go\u00fbter \u00e9galement : les <strong>baci d\u2019angelo<\/strong>, des gourmandises garnies aux amandes, au sucre et aux zestes de citron et d&rsquo;orange, et le <em><strong>sa niuledda<\/strong><\/em>, un dessert de No\u00ebl typique du territoire du mont Acuto aux zestes d&rsquo;orange, aux amandes, au poivre et au miel. Le <strong>pain,<\/strong>aliment incontournable du r\u00e9gime m\u00e9diterran\u00e9en et de la culture galluraise, est pr\u00e9sent sous diff\u00e9rentes formes en Gallura : du <em>pane di tricu ruju,<\/em>le pain de bl\u00e9 rouge utilis\u00e9 dans la zuppa gallurese, au pain de f\u00eate richement d\u00e9cor\u00e9, au centre des repas de famille ; du pain de bl\u00e9 dur \u00e0 la spianata, \u00e0 d\u00e9guster avec des fromages et de la charcuterie du coin, <a href=\"https:\/\/discovergallura.it\/fr\/gastronomia\/formaggi-e-salumi\/\">sans oublier<\/a> la spianata su pane ladu,<em> une variante utilis\u00e9e<\/em>dans la zuppa montina. Le <em><strong>pain carasau<\/strong><\/em> typique \u00e9tait pr\u00e9par\u00e9 chaque semaine dans les stazzi de Gallura. La particularit\u00e9 de ce pain est qu&rsquo;il est moelleux et frais.
