Gallura-style Soup: One of Gallura’s Food Specialities for Your Holidays

Among all the recipes of Sardinian cuisine, Gallura-style soup is undoubtedly an exclusive speciality of Gallura, in northern Sardinia. Known as ‘suppa’ or ‘suppa cuata’ in the local dialect, it is prepared with multiple layers of bread dunked in sheep or beef broth and covered with sheep’s or cow’s cheese, parsley, and several spices.

Gallura-style soup is thought to have its origins in the Middle Ages because it is featured in recipe books of the time and resembles Catalan or Aragonese soup. Over the years, Gallura-style soup has always been perceived as a traditional, humble dish. It is prepared with leftover stale bread, leftover meat broth, and some cheese and spices to add some flavour.
